If you use a tagine, you can basically just put all the ingredients in and start it cooking because the vapor and all with mix it together and all right?
NOTE: I am using a real earthenware Tagine from Morocco, not a new style one which can be heated at high temperatures.
Also, I was told not to use a Tagine on a gas flame because it could crack. I don't have a heat diffuser. That is why I want to just put it in the oven. That is fine right? Can you use a tagine in an oven?
Yes, you cook with a Tagine in the oven. You can use them over a low gas heat but ideally you do need a diffuser.
The shape of the tagine helps all the vapour to circulate blending all the various tastes.
Some people like to season their tagine before first use as it is claimed there can be an "earthenware" taste from the crock.
