this has ALWAYS bothered me... especially as the meat flavour crisps don't contain meat... and some of the "vegetarian" flavours (e.g. cheese and onion) aren't suitable for vegetarians (although i think that could be something to do with using cheese made with rennet?).
I'm guess it's somethign to do with chemicals and stuff but how do they know which chemicals taste like morrocan slow roasted lamb tagine?!? and how do they get them on the crisps?
Also.. when i've tried making my own salt and vinegar crisps (i only had ready salted left and, to me, this flavour is pointless).. by adding salt and vinegar to the crisps, tehy just went all soggy and didn't taste nice at all!How do they make different crisp flavours?

they use these organic molecules called esters. i lernt it in chemistry. they have all sorts of flavors, and different esters have different flavors. they are very complex molecules and are made from carboxylic acids and alcohols.How do they make different crisp flavours?

so true,i knew a vegetarian who ate bacon flavor crisps, i stay away from that king of thing,salt and vinegar is more likley to have the real thing in it.i like walkers sweet thai,know they have sweetners in them,of all things to put in crisps!
i dont know the answers to your questions.but i do know you can buy salt and vinegar seasoning in supermarkets.that would flavour your crisps without making them soggy.
