When you make a tagine, do YOU actually use a tagine?

Sometimes I do but NOT always. My tagine from Morocco cracked but I have two tagines made in Portugal that I got at Tuesday Morning. I think they are overstock from Crate and Barrel. Do you do it the traditional way or do you just use a pot or a pressure cooker?When you make a tagine, do YOU actually use a tagine?
If I am using chicken then it goes straight into the tagine. Chicken cooks quick and doesn't need a lot of time to get tender.

Lamb or beef (depending on the cut) usually see's the pressure cooker before it see's the tagine. If it goes straight into the tagine it would take 2 hours or more to get nice and tender. When it is about 20 minutes from done I put it into the tagine and add any vege's.

If I am cooking for a nice dinner then I'll put it on the grill for a few hours (it's no doubt best that way imo).
Tagine is one of those funny words. It both represents the vessel and the meal in which it is cooked.



So technically a tagine is not a tagine unless it is cooked in a tagine.When you make a tagine, do YOU actually use a tagine?
my husband brought me back a tagine from casa. that i used a few times...but it is soo heavy that i prefer to use a deep pot or dutch oven.
Well, in a not so traditional way to cook Tagine, you can use a pressure cooker.



It gives a very close result in a fraction of the time.

My mom uses it only on special occasions.

We use the pressure cooker like almost everyday.

I always use a tajine, but then again, I live in Morocco and people might think I was nuts if I didn't!
