What shall I add to couscous?

I am making a lamb tagine tonight, what shall I add to the couscous or do I just serve it plain? Think Ive only had couscous once.What shall I add to couscous?
If you roast some red peppers %26amp; cherry tomatoes with some garlic %26amp; mixed herbs then mix these into the cous cous BEFORE you add the water along with the zest of a lemon %26amp; some Moroccan spice mix this works well %26amp; if I'm serving it with lamb I also add chopped up dried apricots %26amp; toasted almonds.

Couscous salad, is delicious served hot or cold, quick and easy to make.



Ingredients:

150ml Broth

60g Couscous

20g Sliced Onions

1 Clove Garlic Crushed

60g Seeded Diced Tomatoes

100g Cooked Chickpeas

30g Raisins

1 tsp ground cumin

2Tbs Lemon Juice

1/4Tbsp Pepper

Fresh Parsley

Cooking instructions

Bring broth to the boil, stir in couscous.

Remove from heat, cover and leave to stand for 10 minutes.

In a deep frying pan saute onions and garlic, until the onions just start to brown.

Check the couscous, it should have soaked up all of the fluid.

Fluff up the couscous with a fork

Add, couscous, tomatoes, chickpeas, raisins and ground cumin, to the onions and garlic.

Cook for 2 minutes until thoroughly hot.

Remove from heat and stir in fresh parsley, lemon juice and pepper.

Can be served hot or chilled.

This is a basic recipe, try adding other ingredients such as Mozzarella Cheese or other vegetables.What shall I add to couscous?
When i make couscous with a tagine i usually add chopped up grilled courgettes (or zucchini if you are american!), chopping sunblush tomatoes, chopping spring onions, crumbled feta cheese and either 1 finely chopped preserved lemon which you can buy in jars or if you don't have then lemon juice and a touch of olive oil.
I add finely chopped garlic a chopped tomato, a few sprigs of mint and olive oil. I fork them in together after the cous-cous has had 5 minutes standing time, its lovely!
Add some peppers and tomatoes.
You could add dried currants and pine nuts to couscous its delish.
Why not mix the lamb in with it?
