Is it true that in Fez they traditionally don't brown the meat in a Tagine?

I forgot to brown the meat the other day and my husband went off on me (okay, okay, it wasn't that bad!!) but anyway......I read before that traditionally they do not brown the meat in tagines in Fes, the gastronomical capital of Morocco. Is this true?



I was trying to counter my husbands argument with this fact lol.Is it true that in Fez they traditionally don't brown the meat in a Tagine?
I can tell you what my good friend Kenza and her husband said (both are from Fez). Tagine is not a Fez dish. They don't eat it often and it is not really a traditional dish from there. So not browned meat makes sense because they probably don't know how to cook tagine properly ;-). lol



I will say my friend Kenza can't cook it, lol.
