I've roasted off red, yellow and green peppers, (in two inch (10cm) wide strips) some thick slices of aubergine, diagonal cut thick slices of courgette, some mixed mushrooms and some red onion wedges in best extra virgin olive oil, garlic and fresh rosemary, salt and pepper, what shall i do with them now?
Make a lasagne, i have got tons of homemade rich thick tomato sauce, i cleared the greenhouse out last week of all my toms and basil...
shall i mix it all together and make a ratatouille, to serve on pasta
shall i add semi dried apricots, Moroccan spices, cous-cous and make a vegetable tagine,
or you tell me! Enough for my five veggie friendsVegetarians, Please help me decide what to cook!!?
that in a lasagna sounds gorgeous do that you and your friends will love it. I know i would! I'm not vegetarian myself but love the good food. Good luck!
any of those sound good, I'd probably make the ratatouille, just because it sounds the easiest, but I would be happy eating any of them. :)Vegetarians, Please help me decide what to cook!!?
